At noon, hungry, I immediately went in for a bowl of hủ tiếu bò kho. My assessment is that the flavor is delicious, very similar to the bò kho I used to eat before in Saigon. The hủ tiếu is chewy and the beef is stewed tender. The broth is rich and slightly spicy with lemongrass flavor. Anyone not used to it might easily choke.
